Cranberry Olive Tomato Almond Lettuce Salad
Prep Time: 30 minutes
Ingredients:
8 leaves Lettuce
10 pcs. Black Olives
20 pcs. Cherry Tomatoes
1 tbsp. Almond Flakes
1 tbsp. Dried Cranberries
Parmesan Cheese (Flakes / Powder)
Dressing:
2 tbsp. Olive Oil
2 tbsp. Apple Cider Vinegar
2 tsp. Honey
1 tsp. HP Sauce
Directions:
- Soak lettuce, tomatoes in a bowl of salt water to remove any pesticide residue for 15 to 20 minutes.
- Mix and stir all dressing ingredients and let it sit in fridge for awhile.
- Drain lettuce and tomatoes. You can either do it using salad spinner or your own preferred method.
- Start by cutting the lettuce about 1.5 inch width and place it into a salad bowl.
- Then add in tomatoes by cutting it into halves.
- Begin slicing olives and add into the bowl.
- Add in the dried cranberries and almond flakes.
- Sprinkle with Parmesan, add dressing and serve.
