Here is some quick prep refreshing salad recipe.
Avocado Corn Tomato Cucumber Salad
Prep Time: 20 minutes | Cooking Time: 0 minute | Yields: 2 to 3 paxs
Ingredients:
1 Avocado Fruit
1 Japanese Cucumber
1 small pack Cherry Tomatoes
1 Sweet Corn
0.5 Lemon
Directions:
- Remove sweet corn from cob and steam in microwave for 5 to 10minutes. Once done, remove from microwave and set to cool down.
- While waiting for the sweet corn to cook. Cut the avocado, and japanese cucumber in small cubes. Cut the cherry tomatoes in halves or 1/3 if it is too big.
- Juice the half lemon. Set aside to top little by little just in case it gets too sour. Or add to your liking.
- Toss everything in the salad bowl and add salt and pepper to taste.
- It is ready to serve or refrigerate for later but not more than 1 day.
