Cooking - Quinoa Salad

This is one of the quick lunch I made during one of the MCO days. This is when some of the fresh vegetables need to be cleared from the fridge.

QUINOA SALAD

Prep Time: 10 minutes | Cooking Time: 30minutes | Yields: 2 paxs

Ingredients 
1 Onion
1 Japanese Cucumber 
1 Cup Corn
1 Tomato
1 Fruit of Your Choice (I have tried fuji apples, granny smith apples, mini tangerines, and sometimes without any fruit in it)
1/2 cup Quinoa

Seasonings 
2 tbsp Olive Oil
Salt & Pepper to taste

Steps
1. Cook the quinoa and corn separately. I used the steamer to cook both at once. Leave to cool and strain the corn from fluids.
2. Chop the remaining ingredients. 
3. Combine all chopped and cooked ingredients into a salad bowl.
4. Add Seasonings then you are ready to eat.
